Takagi was born in 1866, as a simple saw smith in Sanjo city, Niigata. Over the years we have developed into a company selling a wide variety of professional cutting tools. Takagi was founded in the Edo period in Tsubame-Sanjo, Niigata Prefecture, the city of sword makers and craftsmen. The accumulated knowledge as a cutting tool wholesaler with a focus on carpentry tools met beautiful and functional design now. DYK kitchen knives are available in two finishes: "stainless steel" with metallic luster; and "matte black" with modern brushed texture. As reliable partners in your kitchen, these kitchen knives deliver a new feel of cutting and ease of use. Material: stainless steel (handle); molybdenum vanadium steel (blade). The handle of the knife is hollow inside to ensure its lightness.
Funayuki is a traditional Japanese knife that is used by fisherman aboard their boats. These knives are often used to clean, fillet, and test quality of small- or medium-sized fish. Fishermen used their funayuki to prepare food for themselves (either out at sea, or back at port) and had to be capable of cutting meat, vegetables, and fruit. This versatile knife is similar to santoku and gyuto. Funayuki has a relatively flat blade profile and works well with push-cuts and pull-cuts. It can also be used in a rocking motion to mince herbs or other ingredients. Made in Sakai, Japan. Material: steel (hagane) and hinoki cypress wood. Hand wash.
